In reality Japanese food portions are tiny.They have tiny plates, tiny bowls, and tiny cakes and desserts.
Their Pizzas are one size smaller than the Western equivalents. That's just the way they do thing. You don't notice in anime as much about the scale of the food because you mentally assume their plates are the same sizes as yours.

Metabolic pathways are different for different nutrients. Glucose and starch mostly go to glycogen in the liver, fat obviously doesn't while fructose shares its pathway with alcohol breakdown. Not sure how proteins are handled.
Not only does the efficiency of those pathways differ but also the responses they trigger (insulin, appetite, fat uptake of adipose tissues etc.)
And depending on fiber content and complexity of the carbohydrates you might simply end up shitting out some of the calories before they get digested.

It is one of those things people have decided "must" be bad, like artificial sweeteners, despite extensive testing showing very little to support such claims.
It's generally considered safe, but some people are paranoid about it. And it does contain sodium (as does salt of course), so too much certainly is bad for your blood pressure.
But considering that it's just a minor ingredient in a paste that by itself should only be a minor ingredient the dosage should be safe. Just don't eat it by the spoon.
