So far the only bad marks against Hatsuyuki are hardsubbing the karaoke in episode 00 (they didn't do it in episode 01) and translating Rin's German. The hardsubbing is worrisome but if they don't do it again there shouldn't be problems, and translating the German is a nitpick, not really major.

Dub actors almost seem to go out of their way to pause between 'sen' and 'pai' to make sure they pronounce it as 'n' when it's more natural sounding to just go for the 'sempai' instead.

In a vacuum, this is true, but "hero" has a whole lot of extra significance in the Fate universe that makes it a dangerous word to use. Seigi no mikata here is someone who does what is right - a completely different idea from someone who is renowned through history for their deeds (eiyuu, or capital-H Hero). Using the same word for both in a translation is not ideal when they refer to such different concepts.

Keep in mind that Kotomine is the one who later lays out exactly what Zouken is, how the worms work, and how he be defeated. He has an extensive knowledge of the Matou magic. Maybe some of it was gained through operating on Sakura, but certainly not all of it.
Don't make up reasons to excuse Tokiomi. Nothing ever indicates Kotomine has any special ancient magus family spies. There's not any reason not to take him at his word, at least on this matter. If Rin was there, maybe he'd just be saying that to shatter her image of her dad, but she's not and it means absolutely nothing to Shirou, so I don't see what the point of lying here would be.

It is also because the Matou are part of the 3 main families that created the rituals. Tokiomi wanted to make sure that it would be one of the three families to complete the scam ritual and not the outsider. Giving Sakura to the Matou is to increase the chance of that and also making it more likely that those of your blood would have a higher chance of completing the holy grail ritual.

If you care that much, it's not too hard to install MKVToolnix and Aegisub, extract the script, open it in aegisub and replace every instance of "champion of justice" to "hero of justice" / "ally of justice" or whatever you prefer, save the script and then muxing it back. I've done it for subs I have minor gripes with name/terminology choices.
If you wait until it finishes airing, then you can batch extract the subs and batch mux the subs back in with .bat files pretty easily.

Make sure to follow the instructions carefully and skip the opening animations when they start playing (press ctrl) because they contain some big spoilers.
There's a guide for each route on Fuwanovel. I'd recommend Fate -> UBW True End -> HF Normal End 1 (Optional. Increases True End appreciation.) -> HF True End.
If you want to go for HF Normal End 1, you need to be very careful to never get any Illya points except for the +3 choice. Just load a save for whenever the last chance to get a 4th Illya point is after you finish the route, it'll give you a prompt to skip repeated scenes.

In fact it seems more affectionate to me to keep honorifics like sempai or general nicknames over the years, since it constantly refers back to how they met or what part of their relationship was most important to them before becoming a couple.
Sakura and Shirou, in particular, are already a borderline married couple well before dicking occurs. Their relationship does not change much at all once they are together, so it would seem more awkward for her to suddenly change how she calls him, especially considering her submissive and reserved manner.
