I just finished watching the entire Cowboy Bebop series. Wow, absolutely incredible, I will be thinking about it for weeks.
So, here's the thing. I don't really like Anime, but I loved Cowboy Bebop. Could any of you folks recommend me other series I may like? Stuff that's artistic without being pretentious, action-packed without being mindless, and easy-to-follow storywise without being too simplistic. It doesn't have to be like Bebop thematically, but I want an anime of the same caliber.

Ghost in the shell series i believe is of the same caliber anime wise as bebop, you wont be disappointed.
If your looking for something similar to bebop Black lagoon is where it is at but its somewhat inferior than bebop if compared.
GITS is a lot more complex and I found boring. I doubt he'll like it.
Actually I've found GITS fans and Bebop fans to be consistently opposite.

Yeah i skipped past that part where he said "easy story". Caliber wise its they are just about the same in my book, and i didn't really find GITS that hard to follow.

OP, look for anime known as seinen. That's the catagory you want.
Thanks for the suggestions so far, I have a bit of an addendum.
One of the things that scared me away from Anime was the over-the-top themes. Things like cat-people, weird magic, bright colors, akward looking characters, stuff like that. One of the main reasons I liked Bebop was that it was so down-to-earth, even while they were flying around and fighting genetically altered humans I never lost my immersion into the series.
Not to sound picky, but I admit I have a bit of a closed mind when it comes to anime. If I see a a series with too much zaniness I won't give it a chance. I'm not proud of it, but it's the truth.

Try Berserk. If you enjoy it at all, take a further plunge and read the manga.
Keep that mindset and you'll miss gems like Potemayo and Simoun. The premises are pretty absurd but they're great.

Personally I'd recommend Monster (as down-to-earth as it gets), Baccano, Samurai Champloo, and Berserk (don't let the macho style distract you.)
You might like Hellsing but it's very violent for the sake of violence. Maybe Death Note even.
Trigun is better than it looks, but I doubt you'll make it far enough to find out.

Berserk's style isn't very macho if you ask me. The art is actually quite elegant and the details are incredible.

Darker than black i think would be a good suggestion. Its got that down to earth bebop vibe without being too over the top.

I think you should watch Samurai Champloo, it's at the same level as CB.
I'm pretty surprised nobody has dropped a recommendation for Akagi or Kaiji yet. While a little different, maybe less outright action packed (it's action of a different kind), they're down to Earth animes that fit right in with something like Cowboy Bebop.
The art might take a little getting used to, but I think it fits perfectly for what they're going for.

I agree with a lot of the other reccomendations (Outlaw Star, Big O, Berserk, Hellsing [on Hellsing: Even though people are warning you the violence gets rather mindless, I'd say it's still something you'd enjoy]), also check out Beck and Death Note. They fall under the shonen category (which, people will tell you to avoid shonen series and go for seinen series. Don't follow that too closely. There's some good shonen that's not generic over the top fighting anime, and not all seinen is even close to what you're looking for, some of it tends to just be pedophile fanservice).
tl;dr: Watch Death Note, Beck, and, when it ends in about a month, Kaiji.

Tekken the movie is a masterpiece that anyone with an even remote interest in anime owes to themself to see.
Air Gear is probably the best TV series i've seen. Highly recommended.
Also if you can get your hands on it there's a Korean animation movie called "Protectors of Universe" which is excellent. I've only been able to find it dubbed in english, but even the dub is solid and this is coming from a diehard sub watcher.

Those should be fairly good starting points. All of them are typically considered classics and you can use this to see what type of stuff you like and branch off from it by watching stuff from the genre or creator. For example if you like First Gundam you could:
A. Move on to it's sequels starting with Zeta Gundam.
B. Watch other shows from the same creator (Tomino) like Ideon or Dunbine.
C. Watch other real robots mech shows like Votoms

There are actually tons of resources for finding shows and it's extremely easy to find information on them at this point. He gave details of what he wanted but it was all meaningless doubletalk which ends up being totally subjective.

If you are finding for selfcontained stories and good anime here's a couple:
-GunXSword(it looks more like trigun with mecha but is rather good on action scenes)
-Gungrave (if you don't mind char development look the first block of eps, but keep in mind that while they are not shhoting each others the pace will crawl)
