Is there a difference between "dark" and what's considered (for a lack of a better word) "edgy?" What makes something "dark" and something else just simply "edgy?"

Dark things have a bleak and negative outlook or harsh themes, but are presented in a that you like it.
Edgy is supposed to mean avant garde or on the forefront of what is acceptable. But it's an envelope that's often pushed too far for the sake of being pushed too far and that's why edgy has such a bad connotation.

Edgy can be used to describe something that pushes boundaries or could be perceived as offensive. For example, edgy humor might be about things like terrorism, racial stereotypes, abortion, etc. Something that's meant to be edgy that takes itself seriously might include a lot of profanity, violence, sexual content, etc. Edgy doesn't necessarily have a negative connotation too. There are quite a few things that are edgy and good.
Dark just describes the tone of a work. I think this is a little more flexible, and I couldn't give a solid definition for what it entails.
Here's an example: The Nightmare Before Christmas is dark, but it's not edgy. Pulp Fiction is edgy, but it's not dark.

If deals with human nature and it's portraits it in a very realistic way, so much that's it's not funny, and the viewers feel related, infuriated of very sad I would call it dark. Works like Eva in a symbolic way, pun pun, aku no hana, pluto , now and then.
But the definition here sometimes it's only to mock certain attitudes which might be serious in other context but due overuse, have lost all meaning like revenge, in certain settings, the death of an idol being literal or symbolic, friendship etc

Dark means it's spooky and emotionally traumatic. Edgy means it's trying to be dark. Berserk is dark. Shingeki no Kyojin is edgy.

I feel the exact opposite. SnK is really silly and 'fun' in a way that works against any edginess it might have, while Madoka really wants you to feel sorry for these barely established characters .

If I say something like, "Wow, that's pretty edgy," I don't have to mean it's 1) tense or 2) avant-garde. The vast majority of people will understand what I mean.

If we are talking about what constitutes edgy in 4chan terms stuff like a Serbian film, violence for the sake of violence and gratuitous rape with no real point besides it being wanted are what you could consider edgy.
Meanwhile as others have stated stuff like Evangelion, Pun pun, Aku no Hana and Madoka are all what could be considered dark because unlike "edgy" stuff there is usually a point & message to all the violence,rape & soul-crushing pain that happens to the characters.
14 and onwards is pretty dark.
There's nothing particularly tryhard dark that I recall seeing when I watched it. It all flowed smoothly.
But I happen to genuinely enjoy the SnK anime for what it is and find Madoka to mostly be overblown. Problem?

My point is that as 'try hard' as SnK can be, I enjoy it because it's an over the top shounen action series that's silly enough that it's funny and does a better job of it then most of the genre while having something of a planed world to keep me interested (which is still entertainingly silly in itself). I'm not watching it to become attached to the characters in the first place and I'm glad it doesn't try.
Madoka on the other hand isn't really exceptional as a Mahou Shoujo aside from how condensed it is, and has sub par characterisation for its genre. Since it isn't fascinating outside of that or it's audio visual qualities, most of it just bores me.
I hope you're just talking about the anime, I feel offended for some reason.
