I don't mind the one off's at all. This week is a perfect example of how they can work well.
The zombie episode was just the least creative, most cliche zombie jokes spat at you for 20 minutes. It's a show that takes place in space with limitless planets and aliens to explore and they scraped from the bottom of the trope barrel for an entire episode. Fuckin' dumb.

Dandy has some sort of space time powers that allow him to travel through dimensions. so when things go to shit he just goes to a different world. Or we are seeing the different parallel worlds that dandy lives in and each ep its a different dandy.

Also it's pretty dandy. Initially I was slightly dissapointed then lots of fast then dandy becomes god or something so it was pretty good. Feels like it should've been a two parter though.
I guess there are infinite amount of universes with Dandies in them and every episode we see new universe or he somehow travels across timelines and forgets about it or the world just resets like in Endless Eight (but he makes different decisions?)
