Lately I've been doing everything on an android tablet or phone, its just so easy to pick up something small and flat and have fun with it.
I use Windows 8 on my PC, mostly because it has always been the easiest OS for me to watch anime on. I just can't get it right in any of the GNU+Linux OSs I've tried out.

Used to be Win7, Issue happened with the partition, so I installed Linux on it, Bought a new computer recently and now that I've gotten used to it I'd have to say Win8.
There were some rocky patches, particularly with installing it. It's a little up to the roll of the dice but if you pick compatible parts you can make it come together.
I had to install a couple of extra things (to prevent the screen from freezing and to enable FaceTime) but all-in-all it's a cost-effective way of running OS X to be sure.
I am in need of a modern development machine to do shit like Android and iOS programming.

I'd just like to interject for a moment. What you're referring to as Linux, is in fact, GNU/Linux, or as I've recently taken to calling it, GNU plus Linux. Linux is not an operating system unto itself, but rather another free component of a fully functioning GNU system made useful by the GNU corelibs, shell utilities and vital system components comprising a full OS as defined by POSIX.
Many computer users run a modified version of the GNU system every day, without realizing it. Tablets are smaller and lighter, and to portrait better. I find it much nicer to read on and more convenient than a laptop to watch anime on when I'm traveling.
Granted, my laptop is a 15.6" and has more power than I probably need in a laptop, I use it for things I'd normally do on a desktop, just away from home.

That sounds more like the name of a cereal than of an OS.
It's not actually that bad. I was on a team of 3-4 people that maintained a hobbyist OS for about three years before the last one of us quit. Most of what you end up doing is updating packages and making sure the source tree for your packages builds right. The hard work is up front, putting together the scripts that make LiveCDs, doing cross-compilers before you get a self-hosting environment, etc. Once the initial hurdle is covered, you can cost along in maintenance mode for a long time.
In our case, we had significant problems with device drivers because of our choice of internals, and eventually the core components we had chosen had their developers move in ways that were hostile to our choice. So we ended up having to go back to that cross-compiler step over and over again, which was a pain in the ass.
I've been using it on a new laptop and honestly can't complain. It feels like 7 with the tiles tacked on, but it runs faster and hibernates on shutdown.
Welp I'm sad now. My old ME computer died a little before I moved. Its reduced to nothing but a jukebox but, it still had a place in my heart.

It's all about getting a self-hosting system. http://wiki.osdev.org/Main_Page has a very in-depth analysis (they're mostly focused on making POSIX-compliant systems), but you need to get your kernel, you need to get a libc, you need to get a compiler, you need to get device drivers for your target architecture, and you pretty much have to do it all without testing, because until you throw it all into a VM and hand-wire the bootloader (which may not be necessary), you don't know for sure if anything works.
Once you have a VM image that boots, has network functionality, and has a working compiler on board, you just "natively" compile all your user-space applications. Towards the end we had scripts that would build virgin images, configure their rc.local scripts to build our entire package tree, and launch those images with qemu. Then the next morning (realistically, the next week) we would ssh in and check to see what failed and what succeeded. If something failed, we'd patch it until it didn't. Then we'd upload everything to our repository and let it get mirrored.

Its short for ghost imaging. You a ghosting software as a means to convert the contents of a hard drive (everything from OS to individual files) into an image, and then storing that image on a server or burn it onto a CD.

I should also mention that every one of us were complete amateurs doing this part time in University, so half the time we didn't know what the fuck we were doing. We were rather lucky in that our interests aligned a bit with a certain big-name GNU/Linux distro (we weren't making a Linux distro ourselves, that would have been miles easier), so a lot of what we did was just aping professionals.

Its not entirely difficult since there are software that are created for ghosting. Symantec Ghost is something I used before in one of my last jobs. However, I know that it is clearly not free, but there might be free options out there. I haven't looked that far into it myself to be honest.
