There are no grills among the Zoldyck children, including one that hasn't been shown in the anime yet.

Something struck me as awkward with HxH... could it be that it breaks a lot of shounen tropes? It seems to lack this normal progression this kind of manga usually have. I mean the "big bad of the arc is stronger than the last and will eventually get his ass kicked by the MC".

I found that him getting mad at the Troupe was more of him meeting an opinion/thought process that just didn't make sense to him. He befriended Ants knowing that they ate people, but he knew they killed so many because of rules of nature and some of them just liking to do it. The Spiders are impossible to completely understand and they didn't act in a way he really liked.
The troupe killed people and acted like hypocrites to Gon.
The Ants did far worse. And Gon felt that he was responsible (though he really couldn't have done anything).

He wanted to punish her for not getting what he wanted, but realizing that it's due to a reason that agrees with him, his beliefs start to conflict. He wants to punish her for not getting what he came for, but he can't punish her because she's saving someone. It's a dilemma, which causes him to fall into a fit of fury. The fact that he can't get what he wants due to her acting on something he believes to be good, which stops him from acting out makes him even angrier. After all, if she was saving an ant, he'd be able to say fuck this and kill her
