How can I go about watching my animus with jap captions on? I think it might help with me with understanding kanji a little bit better.

Some jap shows have closed captioning, which you'd be able to dig out of the raw transport stream (if you can find one). The captions probably aren't all romaji, but I don't know that for sure.

You could also import Japanese BDs long after the show airs and you stop caring about it, and rip the subtitles from those.
