That's a pretty difficult question to answer.

If pedophiles don't exist, that implies that all adults (above 18 or 21) can't be sexually attracted to anyone underage.

Kids and teenagers would also still be attracted to other underage, but I would guess that all the ecchi shows would just be featuring adults instead of students, anime would also generally be more serious but I doubt lolis would go away since kids can find it cute too.

A lot more would change anon-kun. A lot of the inflation of the Japanese anime industry from the last 15 years was built on 'anime bubble' in the west. All those companies throwing money at Japanese companies for the rights to shows, which the Japanese companies turned around into new shows.

Then the anime buble popped in the west and so did the vast majority of that income coming from the west. Which is why there was a marginal deflation in Japan as well. If anything, Japan probably wouldn't have seen a huge explosion of growth in the anime industry between 1996-2006 like it did without the western anime industry. So at least some smaller amount of shows would have been made.

At least Japan can laugh and say they used the western market like a vampire, sucking it dry.
