If you were to remake a series, what would you pick?
Princess Tutu. Keep the plot the same, but nuke 3/4 of the series since it was all mind wrenchingly awful filler. And every episode of said filler followed the exact same template.
I'd remake Sailor Moon, but only in the intrest of refining the character design.

It should start slow. Some of the filler chapters at the start like the one where he meets Chiu and the school tour. Skip the library exploration part then go straight to Evangeline
The only way the anime would work is if they followed the original Negima manga faithfully. Even the smallest details. Because Akamatsu hints at everything. Change one bit, you change everything.
Possibly Naruto, because it'd be easy. Give it the animation quality, pacing, and development of Avatar before Avatar existed and you'd have a ridiculously fuckwin series. Too bad they had to go and make all those shitty fillers while Avatar actually, you know, turned into a good show.

YuuYuu Hakusho was the only series where I remember the main character 'dying' in like the fist episode, and that didn't even count because he was still the main character, except a ghost

Toriyama has always flown by the seat of his pants, but he lucked into something special for the first half (?) of DBZ up until the end of the freeza arc.
Coherent motivations, a consistent conflict, and a defining powerup for the final battle, where the hero dies in the end. All of this supported by the fact that Dragonball clearly defined the setting beforehand, so doing that isn't even necessary. Sounds pretty good without filler, some cleanup for thematic purposes, and new animation.
putting a flaming lesiban, a shota, Batman, Kamina and Kyon in a room is pretty fucking appealing.
I'd chance erasing the original for that.

TK is the main character not Davis. Focus's on the lost crests and original five digidestined. Davis and new characters form a separate team with Kari while TK rides solo.

Seriously, the manga is just a fucking whirlwind of GAR and awesome, if the anime had just followed the manga better and kept up with the pacing it could have been EPIC. Not sure if I would do this in an OVA format or not though, it could result in the high level of quality that we get from Hellsing Ultimate, but that also means the same waiting time we get from Ultimate. Definitely would work if the pacing was done right and was true to the manga like Hellsing Ultimate is.

I actually preferred disc 2, oddly enough. A few parts felt pretty rushed, but there were no doubts that it was the story that made Xenogears what it is and disc 2 just pushed everything aside in favor of that.

Increase age of the five pilots about five years (no queer emo-kids). Increase power of cannon fodder mechs slightly. Adjust Relena to a more sympathetic character with more intelligent/practical ideals. Give Treize more screen time.

Well if there was actually one to remake, I'd remake the Tsukihime anime and have it follow a more harem-themed route where Hisui and Kohaku get some of their endings and Ciel and Akiha aren't left out in the cold, while still following the general idea that Arc is the main heroine so she would get the focus. Also would actually have real fight scenes that would be at the kind of level you'd see in Bleach, or better, without the stupid powerlevels.
So you're going to juggle with the girls like in Key TV series adaptations? That's even worse than the anime we've got!
Disgaea, Make it not a shit and better follow the game's atmosphere.
- Continue with the monster-of-the-week storyline with overarching character development and plot. Hollows gradually get tougher and more plentiful until Rukia realizes that something big is happening and calls in Soul Society for help.
- Rukia is not and will never be a refugee from/prisoner of Soul Society and will never have needed to be rescued, skipping the entire Namek arc. Introduction of Zaraki and other, less awesome captains would occur when Soul Society shows up to help defend Karakura town from extraordinary Hollow attacks.
- Develop existing characters instead of introducing fucktons of new ones which are promptly forgotten.
- Aizen's betrayal is relocated to Karakura town. Aizen would be apparently murdered when he goes to fight off a wave of Hollows alone, and the subsequent investigation would eventually reveal the body was a fake when the one cast member who hasn't seen Aizen's release investigates the body. In the meantime, Aizen has located collected the Hougyoku (or whatever that Hollow-awakening thing is called) from its hiding point in Karakura town, reveals himself as the mastermind behind the increasing Hollow attacks, then vanishes along with his lackeys. Attacks briefly cease while everyone recovers their wits and deduces what's about to happen. Arrancar start attacking, then the whole of Soul Society goes on the offensive. Orihime is never captured and never gets to do her emo bullshit.
- Nobody's power level ever arbitrarily increases mid-fight. If a lesser character has hidden abilities that are pulled out mid-fight to stop losing, fine, but a main character should not arbitrarily gain a new capability mid-fight unless there is a proper explanation for it (such as off-screen training, which should then be properly referenced when the new ability is brought out). This means that Ichigo's mask still breaks after 11 seconds, not whenever it finally gets broken off of him.

I think Kubo has been getting better about this lately. Zaraki's fight was won because he used two hands, and Cpt. Smogmonster won because he had his daughter drugged with superhuman fluids before the fight even started.
While you're at it someone should fix Gundam SEED and rip out all the stupid recaps, keep the first half, and then actually have ORB put up a real fight in the second half and barely lose. The whole space arc was fine except this time Mwu actually stays dead. And then in DESTINY Kira can lose his plot armor and die in like the first 15ish episodes (like Kamina) and Shinn can take over and not be a whiny little bitch this time and Athrun can be the mentor. And no Lacus clone, no Lacus BS speech, and no slutty Cagalli. Also more suit mods, more mobile armors, upgrade the cannon fodder in skill, and no repetitive plot. Basically scrap DESTINY after the colony drop and start anew.
Technically, Ichigo got to keep his mask on longer because he synchronized with his hollow by giving in to his bloodlust. In other words, generic "power of friendship"-type powerup, only backwards. Go figure.
No, I'm saying that they just get more of a role in this series and we see some real explanations about each of their pasts and what is going on. Shiki still only bones and dates Arc, that doesn't change. Just maybe we can get some hints of the Hisui and Kohaku ends without focusing on them, and we can actually care about Ciel and Akiha. Sorry Sacchin, you still don't have a route. I guess harem was the wrong word, it won't be like Clannad. I think like 26ish episodes would fit the bill.
I'd like to see most of the stand-alone Ergo Proxy episodes removed (except for the especially good ones, like 16) and replaced with a continuous storyline like in the first part of the series (with some of the plot points from the stand-alones infused throughout).

2nding the Code Geass, total remake, keep the first 7 or 8 episodes if you want. Lose 80% of the Gundam SEED and crazy up the Death Note genetics. Don't waste the entire first season by suddenly turning Lelouch into a closet moralfag who's more concerned about his gay feelings for Suzaku and whatnot, thereby accomplishing nothing for 2/3's of the season and have him actally USE his h@x skills to win rather then waste them like a moron. This will prevent plot stagnation, Euphienator asspulls, and the complete destruction of what little actually got accomplished in season 1. Also, Lulu's not gay and takes advantage of at least one of the 50 girls who want in his pants. Make it more over the top, like Nanoha, or god forbid Gurren Lagann.
Also, Berserk. Yeah. Restart, but with the same people doing it, or make an OAV that fills in all they left out of season 1. Continue onwards.
I would maybe remake Basilisk and have the two clans fight against the rival factions instead of being their bitches. And probably have good end. Bad end was pretty good though.

Death Note. I'd make the show just as awesome all the way through as it was for the first 1/3 or 1/2. No L death in the middle.
Dragon Ball Z. It has the most potential. Cut all that filler crap. Cut the crap dialogue and make it more serious. I always felt it held great promise.
Full Metal Alchemist. The last 3 episodes.
Gundam Wing. Same thing but more mature and much more Treize.
Hellsing. The original series with plot. Basically the OVAs except the same style and soundtrack as the original series.
Evangelion. Make a truly ridiculously epic ending. It must be possible.
And more Rozen Maiden and more Berserk. I think that about covers everything.
AND MORE CLAYMORE GOD DAMN IT, with the last few episodes fixed so it follows the manga story (as I assume the manga story will be more epic than any anime original story).
On the subject of hellsing, I think a combination of the old and new graphic/style would be better then just the old style. Fuck yes on the music.
Eva. I'd make some of the characters actually likable. Mostly by making shinji not a bitch. If I can't figure out how to do that, the first and only episode would be a black screen for 20 minutes, and then 4 minutes of the penguin dancing.

You're probably right on a mix of styles, but more of the old way, and some of the new music should be used as well, as it's epic, but the old stuff was just too awesome.
As for style, some of dialogue is classic.

I know people have already suggested Bleach but I'd do something completely different:
Make it a fashion animu.
No, seriously. Ichigo is a guy who can see dead people and who gets involved into fights between hollows and shinigami because every time he is to appear on a new male model photoshooting somebody is killed or heavily injured.
His manager Don Kanonji, a guy he absolutely hates for his attitude but who actually helps him out in his model life (and who is later revealed to have some spiritual power to fight Hollows).
He also receives help from dead fashion models and from Shinigamis (most of who are actually former models from different ages (that includes his father, Kyoraku, Urahara and, of course, Kenpachi (who was also part of an moderately succesful Heavy Metal band and whose swords true form is an electric guitar in form of a demon)).
Sword transformations are mostly replaced with fashion objecs (with the exception of Kenpachi). Urahara obviously has his pimp cane, Kyoraku uses gets a cape and sword in a bullfighter fashion, etc.
Aizen surprises everybody when it is revealed that his plans are to transform the Hollows into mankilling pimps who will erase anyone with some fashion sense from earth.
What about Gatekeepers02?
