I don't miss the cel stuff that much to be honest. I prefer the slickness of today animation to most yesterday's animu's graininess. I don't think cel animation can produce a beauty like Paprika. But I like a mix of the two as well.

Actually, there's some truth to that. Only fresh original anime series became truly popular back in the day. All the run-of-the-mill shows were scorned by a good majority of fans, and were only for when you wanted a good laugh at a cheap show.
Now it's revered. Only the mundane and re-hashed shit is glamorized while most fresh and original titles are scorned at by newer fans.

I actually dislike the "slick" look. One of the appeals to the old craft was how detailed everything looked because of the grainyness. Everything felt gritty and alot more believable than todays clean-looking pastel colored MOEH~ standards.

This. For example, Sailor Moon paved the way for tokusatsu-type magical girl shows. I love and still do, but even I admit it wasn't a good animu.
Same with Tenchi being the first modern harem animu (actually I can't watch Tenchi without wanting to make my myself taller with the proto-Shirou lead). Ranma 1/2 and Lum being the proto-harem animu (they were relatively good until it hit the Takahashi Syndrome and was too long).

Even the OP pic is a good example of how so many shows had a general generic feeling to them, with only minor stylistic changes. You had that look that fit in for most shonen shows, the one for every shoujo anime under the sun, and then stuff like the OP. It just doesn't compare to the look pulled off by shows like Akagi/Kaiji, Mononoke, and Jigoku Shoujo (pic related).
Yes, there are good shows from "back then" but it's not as favorable of a ratio as you'd like to think. The sheer increase in volume has created a much wider variety of shows, not even taking into effect how many "good" shows there are. But it's not as low of a percentage as you make it out to be.

Loser characters have always been there as well, and if it wasn't a guy like that leading the harem it was some pervert who acted like he never ejaculated in his life. It wasn't "cool" or "gar" or whatever, it was something that got old fast. As for slice of life... that's simply a matter of taste. Some people like hot-blooded action sequences, other's like more character-driven stuff that can involve scenes of nothing but walking and talking.
