ok so i wanted to get into eva, so i marathoned the main series plus i watched death (can't find rebirth anywhere) and the end of evangelion
Well, Rebirth and End of Evangelion are the same thing. Death was just a recap that was shown before Rebirth, thus why there's a 15 or 30 minute pause after Death so people could take a break before Rebirth came on.
You're pretty much done with the series. If you want more Eva, watch the Rebuild movies for a retake on the Eva series. It's pretty damn good in the visual department, but the story gets a little banana at points, but still good. Not as good as the original though, at least to me. I haven't read the manga myself, but I've only heard good things about it.

Well, they're more like a retelling of the original story to be more theatrical, so the story matters a bit less in favor of looking amazing and it kind of works out. It's also a bit different at points. 1.0 is pretty much 1:1 though. 2.0 is where it strays away from the original story, and 3.0 is something else entirely.
Again, the movies don't live up to the original for me, but they're still pretty good.

Basically at the end of Eva when Gainax was out of budget, they could either conclude the overarching story or resolve the character's (Shinji) issues. Anno chose character development. Rebuilds are story + tasteless fanservice.

Pretty much, yeah. I'd recommend going over to evageeks.org for any explanations on questions you might have for both the main series/movie and the Rebuild movies. They've got information from things like interviews and Japanese-only games that give a deeper look into certain things. The site also explains a lot of things that are pretty much only inferred to and would be hard to realize or come upon without very careful analysis.

Not entirely. Several key parts of knowing what's going on are basically only even slightly mentioned and would take a bit of intent watching to really connect the dots by oneself. When you do know it and read up on all the stuff, it's a really cool rewatch, because you get to see it all come together and certain parts that were completely out of left field make a lot of sense. There are obviously still parts that will probably never really be understood though.

Anno only started to make Asuka into a mental wreck in the later episodes. It was all subtle until EP 13 and change of style came knockin'.
Asuka was always a mental wreck, she was just good at keeping it under wraps and putting on a face for everyone. Stuff like that doesn't stay bottled up forever which is what we see when she starts to fall apart.
