Mushishi is distinctly Japanese in a classic sense, if you knew anything about Japan's culture, folklore, art, or classic film, you would know that Mushishi is more Japanese than 99% of anime.
Most people on /a/ haven't even heard of Ping Pong, and have already decided that it is "hipster shit" because it is different than the rest of whats airing.

I've never sat a whole season out. i'm scared.
I am expecting these three shows to be solid 8/10s. In all of 2013, there were only three 8/10 shows, maybe four if I am being generous, but possibly only two if I am being harsh, I am not quite sure yet. If in one season, there are three shows that are looking great, than regardless of what else is airing, it sure as hell isn't a bad season.
Will Knights of Sidonia be one or two cour? I also see a lot of people hyped about Ping Pong. Is it just popular sports manga, or am I missing something here?

Ping Pong isn't so much sports as psychological developments. Source material is by Taiyou Matsumoto. It's directed by Yuasa. Really, that's all I need to get hyped.
Yeah, even in Summer 2012, Spring/Summer 2013, and other similarly bad seasons, I at least found a couple things to watch, and legitimately enjoyed at least one show. I'm nervous about this season.

None of these adaptations have very interesting source material that makes them a "must watch."
The 1+n seasons are all of shows whose previous seasons weren't that great.
As per usual the anime-originals will have to be sampled before they can be dropped, but nothing looks exceptional. That's not to say I won't watch anything, but it's going to be a bland season.
The obvious winners here are Ping Pong, Jojo and Mushishi, but other than that, it's a crapshoot. I don't see the point in deciding what you are going to watch so soon. I decide after first episodes, and adjust based on what turns to shit/seems good that I missed.
I yearn for a trainwreck that is as fun to watch with /a/ as guilty crown was, but the odds of that happening are slim.
The only thing that isn't a new season that looks remotely interesting is Knights of Sidonia. Is there anything else that I haven't given a chance?

Okay, I grant you that it's a tricky subject, but here's my logic.
Manga adaptations are almost always worse than the manga. If you like a manga, you'll probably dislike the adaptation. If you dislike a manga, you're not going to watch the adaptation. So the only adaptations you'll watch are things you feel neutral about, and nine times out of ten it's easier to just go read the manga. There are some manga adaptations I've enjoyed but it's really only worth it if you're really excited about one or the show has a really good composer, because music can add a lot. The main problem is an adaptation usually just plain looks like shit compared to the manga art.
LN adaptations are usually shittier than manga adaptations because LNs are usually shittier than manga. But most of the time you can't read an LN. On top of that, LNs are basically anime scripts, so when there are good ones, the anime can be good if done right.
It's a little more nuanced than that in my head but that's about the clearest I can explain my feelings on the matter.
It's Jojo, by now everyone knows whether or not they're going to enjoy it.

I understand your reasoning, but there's one thing. Sometimes the manga isn't available scanlated and ready for casual consumption either before the show airs and picks up some fans and interest. The manga could also be something that passed under your radar until you checked out the latest season chart. After all, anime is used as a tool for selling manga.
