Then what's the point of building power armor? Why not just build a walker vehicle for all terrain, or a single driver walker? They could carry more weapon and pack more fire power.

They could be shot into enemy territory, jump around dropping nukes and zoom back out again.

One of the big uses of the Jacket is to protect the user from the toxic shit the Mimics spread all over the battlefield.
Having Tom Cruise and staff like that exposed already renders that plot point moot and kind of kill the whole point of the aliens (they are Terraforming the planet).

It's not like Mimic timehax extends to the point where every single Mimic is capable of perfectly dodging every individual bullet or shell or rocket that comes their way. It applies more to the strategic situation. With Rita's timehax to take care of that, properly arming and supporting the troops means a lot less dead men and a lot less ruined multimillion dollar equipment.

I think it's at least partly due to the idea that the function of the powered suit is to be purely a strength and mobility multiplier to permit the carrying of heavier equipment, longer distance travel, and the power to punch through walls.
This is with the view in mind that if you put enough armor on a man-sized frame to stand up to existing anti-armor munitions i.e. the kind of armor thickness the front of an MBT has, you add so much weight that power consumption and mobility are compromised beyond the point of usefulness.
So in a situation where the opposing force's infantry can easily deploy large quantities of anti-armor munitions e.g. COIN work against urban gorillas with boxloads of RPG-7s left over from the Cold War, or in this case, open battlefield high speed maneuvering against swarms of tough as nails ahliens whose highly accurate projectiles have been demonstrated to punch through Jacket armor like cardboard, it might be understandable that the suits aren't supposed to try and stop projectiles that they cannot, but rather to permit the soldiers to carry heavy weapons like the pile driver that can hurt them while still being able to run at forty miles an hour to keep up with the tanks.
tl;dr taking off armor plating maximizes thrust to weight ratio.

Up until now the manga has been good and faithful to the LN material. Obviously the LN is more detailed. Also since the manga is ongoing I have no idea if it's gonna be worse than reading the LN.
