So I wanted to get into Gundam and now I'm watching this for the first time. I like it, but I'm wondering when things start to seriously pick up. I'm on Ep8 now.
Does it keep getting better? Is Zeta much different? Because I'll be watching that right after.

Zeta is a lot more serious and ZZ is very 'fun and easygoing' to put it mildly.
Gundam takes a long time to pick up, but just sit through it.
Zeta has a different main character which often gets called an autistic little kid, because he kind of is. Still, Zeta is great if you can bring yourself to like Kamille.
Your enjoyment of ZZ depends directly on how you enjoyed Zeta. If you like Zeta, there is probably no chance that you'll like ZZ. It's like a piece of shit shoved down your throat and generally makes you hate Gundam. But if you disliked Zeta, then you'll probably really like ZZ.
In any case, sit through everything.
It gets really good by the half-way mark. All of the other entries in the franchise range from mediocre to absolute shit; this is the only good one so enjoy it.
Give 'em some credit for at least trying to explain the plot armor. Amuro is invincible because he stole the Federation's skunkworks project. He knew how to pilot it because his dad designed it, and he's such an engineering nerd that he wouldn't evacuate 'til best girl dragged his ass to a bomb shelter.
It does take a long time to pick up—the series almost got cancelled due to poor ratings—but it does pick up a neat Hunt for Red October vibe. Eventually, you start to care about the characters, and then it all falls into place.
My favorite Gundam series is Gundam 00. The second seasom gets hate, but I don't think it deserves it and I think a lot of it is bandwagon hate. You should give it a shot
I wouldn't mind if he got a bit more characterization.
And I realize this show was basically the equivalent of a saturday morning cartoon in Japan, but could they at least try? A bunch of civillians being able to pilot, maneuver and operate a prototype space ship just by a few minutes reading the manual is a bit ridiculous, but I'm okay with it because I guess the theme they're pushing for is bravery.

The beginning is good. But most of the greater moments happen a little further on. I liked the whole feel of every episode all the way through, except a few filler ones. But if you think it's boring now then Zeta will be worse for you.

I'm watching the episodes because they are entertaining and the characters are nice, but not because I want to see what happens next. Which could be good or bad, I don't know. But I'm definitely not going to stop watching. I'll at least see this series, Zeta, and Char's Counterattack to the end before I decide Gundam isn't for me.

Funny you mention that, as that's something I have to remind myself when watching old shows. An insurgent rebellion faction that fights for independence from Earth's government after humanity ventured into space is not original at all, but in the 80s, it might have been.
Also, watching the Gundam reminded me that I had a toy figure of it when I was a kid. It was complete with both swords, the bazooka, the shield, and the pulse rifle. I fucking loved that thing.

Zeta was way to serious compared to the Original Series. Zeta was so bad that even ZZ was better. Unicorn is probably the closest to the original, it was quite enjoyable if you can get over Banaghe.

The problem with Zeta is that 50% of the characters are very unlikable. The story, ms fights, and the other 50% of the characters are all great and make Zeta a solid 7.5/10.
Unicorn has the advantage of great animation and great MS designs, but the main plot is terrible (the whole laplace box thing is cringe fanfic tier), which makes it a 6.5/10.
Build Fighters is just fanboy wank in toy commercial format. It's pretty great.

As a solo series (ignoring the existence of Destiny) Seed is a solid 6.5/10, Sure it had a lot of flaws and some very annoying characters, but the story wasn't that bad. It's only when Kira got Freedom that things started to turn really ugly.
08th MS team is a breath of fresh air. It was refreshing to see non over-powered suits or MC's newtype shenanigans for a change. The Romeo and Juliet subplot somehow ruined it, but it's still a 6.5/10.
00 S2 was a great disappointment. After an interesting and promising first season I was expecting something better (my bad, I guess. Sunrise does have a bad fame of fucking up second seasons). Sadly, things only got worse with Trailblazer.

Kamille and Four are newtypes, they have a special connection.
I frankly hate newtype connections as a way to justify romance, but the whole thing with Four had a great effect of Kamille's development as an MC, so I can't really hate on them.
You realize most war literature is like that right? Because when you're defeated you're pretty much captured, crippled, or dead. Amuro was killed by a rock in the end, Kamille became a retard, and Judau became an unhappy jerk that fucked off to Jupiter.
That kind of plot armor has existed in storytelling since antiquity. The majority of 0079s plot armor lies in the fact that for half the series the Gundam was the most advanced suit around allowing Amuro to get good.

AGE ranks amongst the worst anime I've seen, Wing is mediocre at best, SEED is... well SEED, Trailblazer was a colossal mess of beamspam and wasted opportunity.

One of the best war literature written is Romance of the Three Kingdoms and the characters' strengths, defeats and deaths are a million times more interesting than anything in Gundam. You can see this especially in the deaths of Guan Yu and Zhang Fei, both of whom were among the top strongest characters in the work and who ended up dying atrocious deaths, caused by the flaws in their characters.
