From what I got, he got some sort of identity crisis because he pretended to be a nice guy in the beginning to fool everyone, but he actually became a nice guy, and he didn't knew which one he was: the angry, stoic killer or the clumsy, polite neighbor. That much I understand. But after that, in Gaiden, it completely disappears and he goes full stoic killer mode. It confuses me.

Not really, to me, his real personality was closer to his stoic facade than anything (again, due to his past).
There's a very human and well-meaning personality down there, but it's one he doesn't like to let it out much, and not just because of the Contractor thing.
Everyone and their uncles are out to kill him and Yin in Gaiden, though.
He's still pretty mellow to Yin, but apart from that, I don't know what you were expecting him to be like while constantly fighting for his life, and more importantly, Yin's.
Not to mention when she gets kidnapped.

Edgy (at least what you're trying to express by using it, since that's not what it means) is character that constantly whines to himself, constantly spews bullshit criticizing shit around him but not doing anything, throws around death threats like greetings, etc.
tl;dr: A character shaped simply to be c0Ol and awesome, Hei is that way because he actually has a fucking reason to.

I don't think it has to do with kuudere. Well, at least, for me. Yin is shown to genuinely care for Hei and she has been there for him to help him whenever she can. And Hei protects and cares about Yin in the same way. It's actually one of the few couples that feel genuine.
No, Tsuki Akari is probably one of the best ones ever made, although I'd say From Dusk Till Dawn is just as good.

Contractors and Dolls never really loose their emotions, that is more than anything an assumption on part of the Syndicate and the people that hire them.
The feelings are still there, it's just that they practically forget how to express them, or it at least becomes very difficult for them to.

If you walked up to me and asked me to identify one single thing that made S2 bad. I would say that it's subtlety. S1 thrived on subtly and a noir atmosphere. It was primarily about how people were coping with having the world change in a completely alien way and having no idea about whats going on. And each of the arcs explored what was happening to the people involved.
S2 on the other hand made it about ancient prophecies and Mahou Shoujo Ptr-d Cure.
But that's the thing. Sequels shouldn't completely ignore or reject the source material. Which is what S2 majorly does. Why the fuck make a sequel when it barely resembles its predecessor?

By then it was DtB because it had the same name and people with powers and secret organizations. But it barely resembled it at all. Hell, it wasn't until Gaiden we got the god tier action scenes with Hei. Those were largely missing in S2.

If I had to explain: Do I hate Suou? Probably not. Do I hate how Suou's character was treated? Yes. As I said before, Suou would be a great character wasn't she on a different setting. She just doesn't fit at all in DtB. The second complain being that they didn't need to make the world spin around her like they did. Otherwise, I don't care about her as a character, I just hate how they ignored the whole runaway plot with Yin and Hei to favor Sou's own messed up plot when her whole character came out from nowhere.

The only thing actually disappointing was Suou being utterly incompetent at every point in the series and Hei being nerfed way harder than there was any justification for by losing his powers. (He got his reputation for Contractor killing BEFORE getting electricity, him being suddenly at a loss for ways to kill people without it was retarded.)
