The "I" they use is an extremely formal "I" that connotates that they are a person of a high-ranking position. The closest english equivalent is the royal "We", even if that adds in a plurality that isn't present in the original.
It is on purpose, that doesn't mean it is correct. The translators are trying to insert meaning that isn't there. There are forms of "I" in Japanese that translate well to royal we, but she uses the most normal way you could refer to yourself.

No, as accurate subs. It's the closest possible translation and they can't just leave the word "I" untranslated and have a TL note every time it pops up. If you want shit subs look at Nourin
