There's a lot of lemon stories that essentially use them as author stand-ins. Mostly to fuck Ranma.
Brown and busty definitely had something to do with it. I liked her OVA 1+2 English voice actress better than her original Japanese voice, not that that there was anything wrong with it, because it did a better job of really highlighting how mysteriously complex Mihoshi was than she let on. Mihoshi in the original OVA is a really nice, earnest girl and so easy to root for as the cute underdog.

Comparable cast ages, locations, and timeframe of the respective series is my guess. Both involve high school students (or at least those in that age group) as the protagonists, and take place in urban/suburban environments mostly, and taking place within relative times within at least a decade of each other, making the underlying social culture similar.
For Dragonball of Gundam, you have the details of either being in a fairly divergent universe (aliens, demons, animal-people, capsule-tech, etc), or being in the future (space colonies, mecha), which would would require either trying to awkwardly merge the two settings, or just forgo that and drop a character from one to the other directly with all the problems that would cause. With Ranma and Sailor Moon, you could easily just have it as "they never noticed/had reason to interact with each other until now"

I found she wasn't terrible, per se, but more that she was more... lacking in growth as a character. The same can be said for most of the cast, but in her it's more pronounced because of how she acts overall. Her main response to Ranma's actions (real or perceived) is usually aggression in one form or another. Which is fine at the start when they had just met... but after everything that happens since then, it just kept going. Other than the occasional brief moment at the end of a chapter/episode to maintain the idea that "look, she does care" she never stops trying to hit him, never stops calling him a pervert, never stops telling him to stop flirting with girls/picking on rival boys even when they're usually the ones initiating such, and so forth. It gets very tiring, and if it weren't for maintaining status quo would/should have ended at least 1/4 to 1/3 into the run of the series.
Also, Akane always has the upper hand socially in every situation with Ranma. If he ever seriously talked back to her, he would receive fallout from her family, his family, and even characters like Ryoga, and Kuno.
As much as she's helped him a few times and even moments of genuine caring for Ranma, it doesn't make up for 70% of the time that she's being a complete bitch and accusing him of everything under the sun.
Case in point, pic related was actually a time when Akane thought Ranma was capable of raping her, just because he was hugging her every time she sneezed.
I think they would be okay as friends but definitely not as anything more. Their relationship is anything but equal or respectful.
Remember the time she got that battle dogi that made her super powerful? She beat Ranma up and claimed she'd hate him if he even laid a finger on her.
She had some real issues. It'd be fine her character actually developed, but she never works through her problems.

Well early in the series Ataru was dating Shinobu, which was essentially a proto-Akane. She lost out though when Lum became really popular.
A lot of people say that that was Ranma's fault and as much as I hate myself for saying this (I have to be true to facts) it was but only slightly.
Akane kept gloating how much stronger she was then Ranma because the dogi brought out the "full potential" (or whatever such bullshit) out of its wearer. So Ranma got irritated and tried to seduce her so that the dogi would lose it's power over her. Then Akane found out and got buttfrustrated.
It seems that Akane is often the one to set arguments/fights in motion between them (for one reason or another) and Ranma just finds a way to win each time.

I think the only reason it did was because it was a gag episode that seemed oddly serious. It's Takahashi's own fault for writing her characters in this perpetual tsundere state where they're always arguing and saying stupid shit to each other then overreacting.. Then we get one episode where Ranma calms the fuck down, says something uncharacteristically sincere.. and it's all sort of heartbreaking, because everyone else just wants to restore the status quo even though Ranma is just tired of all the bullshit and sounds like she's saying what she actually means.
I can see why it would spawn fanfics and stick out in fans' memories amongst all the episodes.

You're missing the joke. Akane really *wants* Ranma to just ravage her a bunch of times, but because that would be "perverted" and she's one half of the tsundere pair she represses it. It's supposed to be funny that she's the one thinking about sex all the time.

Uh, no. Ranma and Akane have the practically the only relationship that *isn't* in some way trying to take advantage of the other.
Too much of Takahashi's whole body of work spends entire arcs, episodes, and volumes building up to a moment of mutual understanding where two characters hate each other a little less and even come to understand and appreciate one another a little more.. only for one of them to say something unnecessarily stupid and for things to just fade out with them bickering and throwing shit.
If she didn't write such likable and interesting characters, I don't think I'd be able to stand any of her shit, but despite all her shortcomings as an author, I can't help but love Ranma as a series.

Off the top of my head, I liked:
Dark Lords, Big Human, Hell Is Martial Artists, newRanma in a soap operay way, Syncretion (or something, it's a weird Ranma/FSN one) and Seven Village Stomp.
Whereas I hated Heir to the Empire and whatever that police one by the Big Human Guy is called.
I've read others but can't name them off the cuff.

That's more of a problem with the manga industry in general, especially if you don't know if your series will last a year or 10 years. That and committing to one pairing when you have a giant stable of characters is pretty much a surefire way to piss off oversensitive otaku and ruin the popularity of your series.

The Bitter End and Genma's Daughter are two of the more notable ones off the top of my head. You can argue about proper characterization, but they're interesting in their own ways.

This is why I don't read much fan fiction at all. Too many amateur authors get bogged down by stupid little shit and waste your time trying to make things relatable by drawing for their own boring lives, while also trying to emulate anime in a format that doesn't really lend itself to the usual quirks of the medium.

Except the part where conflicts are solved too easily, too many boring and irrelevant camoes, too long and boring back story of some Chinese Amazons that I don't give a damn about, Norse gods, the Seer and all the magical interludes to the BBEG. Just plain boring.
But all the shenanigans between Ranma, Shampoo and sometimes Akane are good.
If you want great fanfiction that genuinely feels like another entry into a franchise. You should read Lelouch of Britannia.
Akane and Ranma finally get married. It should be the end of all the troubles, and indeed, after a little misunderstanding at the start, the honeymoon is wonderful. But after the return the fights resume, and although Ranma tries his best to avoid provoking Akane, the beatings get more and more serious.
Things culminate in a fatal encounter when Ukyo decides she has to take Ranma away from Akane for his own safety, and Ranma himself is willing to concede that maybe he and Akane shouldn't be married anymore. The result of Akane's burst of fury is that she kills both Ranma and Ukyo with the sword that Nodoka gave her as a wedding present; the realisation of what she has done driving her completely over the edge. As the story ends, Akane remains committed in a mental asylum, leaving behind a saddened, fragmented group of survivors.
