I tried watching Fate/Stay Night a couple years ago but it was absolute dogshit. I know the VN is much better, from what I heard but i'm not a huge fan of visual novels. Anyways, I started watching Fate/Zero, mainly because I hear good things about pic related ie. he's on guts' level of suffering but I feel left out, almost like i'm missing something. Should I force myself through the Fate/Stay Night anime before watching Fate/Zero, or is Fate/Zero accessible to newcomers to the series?

I'm pretty much the same as you OP. I tried to watch FSN twice and both times I found it wasn't that bad until around 10 episodes then it turned to shit. I just skipped to watch the final and know the result then watch FZ with and enjoyed it very much.

I've read the F/SN VN, the F/Z LN and seen the anime for both. It's perfectly fine to just watch the F/Z anime on its own. The rest of the franchise is pretty shit compared to it anyway, except for the last two days of the final route in F/SN. Go for it.
The anime is bad. This isn't just a case of the studio doing a lazy adaption or leaving things out. DEEN absolutely butchered it. It's a horrible way to get into the franchise, and you should forgot you ever wasted time on it.

I didn't say the novels were good, they're very dry and impossible to read. The anime movies work much better.
"Bland" characters (I would call none of them bland beyond Azaka and Mikiya, Kokutous bottom tier) aren't anything juvenile or edgy, though. Shiki, the central character, goes through plenty of development. Everyone else is too out of focus to need it for story flow.
