In a straight up fight, how would Part II's Joseph fare against Part III's Dio?

In the end all those comparisons make very little sense because of the ripple->stands switch. What's irritating for me is that suddenly every fucking random kid gets a stand without any effort in recent parts.

That's from the wiki, and based off of it I'd say stands could probably damage pillar men without getting absorbed or allowing them to simply regenerate it.

It wouldn't. Remember the Ripple is supposed to emulate not just life but the power of the sun itself.

Stands affect other thing such as time, element, space, etc so it doesn't exactly function the same way as a ripple does.
