Tbis isn't going to go on for very long, right? This manga if I recall correctly has only gotten through the prologue (of who knows how long of a story it will be) and one chapter comes outu a month, right? I guess they could just do the prologue but I feel like that would be a short amount of material and then they'd have to wait a long time before they could make another season assuming it was popular enough to get one.

I'm usually the one saying "It won't be so bad, keep on topic/ignore", but this one could be different since this series goes quite a few years back when Spore picked it up. The threads have an old group of readers and the anime will bring in a new crowd.
Because both of them may have seinen level violence but they're very shonen in that so many shonen series have bullshit where the protagonist asks "What does it mean to be strong?" over and over again despite seeing plenty of good examples of different kinds of strength besides martial strength.
Neither was very complex to begin with. Both have content that's very much like typical shonen series. They remind me of Hajime no Ippo since Ippo's father passed away and every couple hundred chapters Ippo will question what it means to be strong again and say he wants to be strong like his father was.
And both series took fucking forever for the characters to figure out pacifism can be a form of strength.
Shit loads of series for younger readers have characters questioning what strength is. The ones that tout the power of friendship are often a variation of the theme since they will have an MC or antagonist or both start out thinking strength means being able to do everything on your own and then the MC learns or proves to the MC that strength can be found in friendship and having the courage to trust others as well as in being independent.
Vinland Saga has been pretty damn heavy handed like a shonen series with its Christian moments like all the vikings basically calling a religious man a fag when he questioned their values early on in the story.

It is kinda sadistic and at least up to chapter 7 is way too repetitive. I can see the overlying story progressing, but scanlators are a fickle bunch and they might just say fuck it after seeing the Mistress getting hanged.
