I'm relatively new to the anime scene, and I'm looking for something good to sink my teeth into. What does /a/ recommend?

For reference, I LOVED Elfen Lied (had its flaws, but still), and Cowboy Bebop is nice every once in a while, but too goofy for me. Looking for something that flows in a series, rather than something where each episode stands on its own. Halp?
In other words, I'm looking for something with a juicy story and dynamic characters that I could sit and watch for HOURS.
