Sakura's situation isn't known in those two routes, so why would Rin or anyone else think she needs "saved" at that point? It becomes clear in HF that neither Rin or Shirou knew what was going on at the Matou household.

Meanwhile, in UBW, after being stabbed for an attempted rape, and having his wound go septic, Gilgamesh punches Illya's heart into his chest, and he explodes into a fleshy mass of puss and acrid goo. Wouldn't it make more thematic sense for him to survive in Fate?

Still, despite how he is treated and the shit hand he has been dealt, he puts it in his mind to somehow become a Magus. That is what he desires, despite that impossibility of it. Yet what happens? He finds he is replaced by a child of another family. She is going to be the head of the house, not Shinji.
Sure, he is a total douche for taking it out on Sakura. Sure, even ignoring the rape his personality is fucked. But frankly it isn't entirely his fault. It's not like he is evil for the sake of it; over the years he has developed like that, and deep down he is just a sad child who hasn't had anyone to help him.
None of this makes up for what he did to Sakura, obviously. But he doesn't deserve some horrible death. Even Sakura would have preferred to live with her nii-san peacefully. Maybe in the non-existent Shinji route Shirou helps Shinji become a better person and creates a peaceful Matou household by murdering the real scumbag (Zouken) and creating a happy family.

Feito/Sutei Naito is a visual novel that got an anime adaptation of debated quality, a manga reinterpretation-thing, a light novel prequel, a well-received anime adaptation of that prequel, and a bunch of other things.
Not like it matters, since she still doesn't manage to completely kill him, he's gotta' be the most tenacious character in the entire franchise.

His after-action report and the people on the ground confirm that the SEAL team was facing between fifteen and thirty enemies. Now look at Lone Survivor, where they face over a hundred Taliban at least. Given another ten years, I would expect the number to grow even more.
Or look at the Wehrmacht. Overall, they were a pretty mediocre fighting force. Even their victories in Poland were overplayed by propaganda, and their advance in Operation Barbarossa resulted in at least a million German losses. But they're still venerated by a lot of people as the ultimate fighting force of the twentieth century.
Perceptions of the public and not that of scholars are often what shapes perceptions of something in history.

There's just so much junk data that all of these legends will be lost in time in the slew of trash that nobody wants to filter through.

Hollywood is not a goddamn fable teller and even if it were, that's still not impressive enough to compare against actual myth. "I killed a lot of guys with my gun" is NOTHING compared to "I battled an invincible fire breathing lizard and beheaded it" or "I faced the god of war in combat and laid him low".

You have to train to know how to use a sword. Literally anyone can wield a gun with minor proficiency after an hour of instruction, and with extremely high proficiency after two weeks of training.
To be a swordsman you have to train your sword-arm for a year and constantly practice.
Beyond that, Theseus had to overpower the beast with his own might to "let his sword kill it", he didn't just wave a metal object at it and it fell down from across the room.

After a 20 minute session of instruction, another 20 minute session of testing how to fire, and a final 20 minute session of experimentation with the weapon, you will be able to hit a stationary target. This is the basic modicum of skill necessary to kill someone with a gun. The same can be said for crossbows, and the only crossbow-wielding hero we've seen was riding on the name of a bigger myth anyway.
This is leagues of difference in comparison with training to use any form of melee weapon or bow.

He didn't say that. He said "it's difficult" for a gun user to become a heroic spirit. The reason for that is that guns are way easier to kill people with. Pick up an automatic rifle, unload it into a crowd, and you can kill 100 people in a few seconds.
That's just not possible with something like a sword, where it depends on your own physical strength, or a bow where you don't have fancy scopes or sights to help you aim.
To become a heroic spirit with a gun, you'd need to have not just incredible accomplishments, but accomplishments that can be tied to yourself, and not just the weapon.
Kiritsugu makes great use of guns in Zero though. And bombs.
And he cannot even come close to a single fragment of Assassin, the weakest form of the weakest hero.
He used them well against one very arrogant mage. And even then, he used magical bullets. Without his Origin Shot, Kayneth would have fucked him up.
And in his fight against Kirie, his gun usage was stretched to its limits vs someone who used swords and knew some kung-fu

He fought on equal footing with Kirei at his peak. An older, weaker kirei beat the full True assassin in HF, and Nasu has said that Kirei from Zero could have even beaten Ciel.

It was said in the Zero Special that at their peak they probably could have fought a weak servant, maybe a Caster or Assassin. It might not be an equal fight, but they could at least manage enough not to die outright.

You're wrong on three points.
1. Kiritsugu did not fight on equal footing with Kirei. He was killed twice, once by Kotomine's fist and once by casting Square Accel. Avalon let him not die when he was killed, same as Shirou.
2. Kotomine never "beat" True Assassin, he temporarily disabled him by taking advantage of when Hassan's Zabaniya failed. If Hassan chose to stab him with a Dark and not use his Noble Phantasm, Kotomine would be dead. In terms of combat prowess, he does not come close to Hassan.
3. Guns were not what let Kiritsugu make up the difference with Kotomine, magecraft was.

Also the reason Ciel can't compete is because statistically and in terms of weaponry they tend to outrank her in every respect, but her weapon could most likely damage one pretty well if it scored a direct hit.
Actually, her HA H-scene is about Rider caring a lot about Shirou, they even say it to you outright that she actually now loves him too.
It's not "defeat", it's "battle with some chances and not an assured loss". It's like Cuchulainn vs. Herakles, it's still a massively daunting challenge that requires luck and strategy. They're still not on the same level and the one with the edge is quite clear.
