Was the Karen Bee arc of Nisemonogatari kind of off, or do I just have shit taste.

This. Nise is the weakest Monogatari series, but it was still enjoyable. I would have preferred that Karen's arc been more concise and Tsukihi's been fleshed out better. I'm not an LNfag though so I'm not sure if that's how the books were, though. As it stands I felt Tsukihi got shortchanged much like Nadeko did in Bake. I felt the focus on just the sisters hurt Nise but thankfully they're both endearing characters so it was still worth seeing.

I felt Bee arc was alright, just longer than it needed to be. I mean 7 episodes? They should've made it 5 or 6, and given Phoenix and additional ep.

Nise's more random and for lack of a better word, "filler" conversations are a lot better than Bake, I just went in expecting a fast plot much like Bake, that covers twice as much as Nise did in 15. It was more enjoyable the second time around because I cared less about the plot and focused more the character ineraction.

I can see how the conversations are more relevant to overall characterization, but less how it's part of the plots of Karen bee and Tsukhi Phoenix

And are told in a better manner. Nise wasted too much time on the Karen arc and completely glossed over Tsukihi's. Plus the Nise arcs are pretty much introductory arcs for the sisters, who got little screen time in Bake. I'm not trying to hate on Nise or anything though. I loved the series.

how much time in the karen arc was specifically dedicated to karen?
it was ok imo and it gave good characterization, though i wouldnt enjoyed it as much if i had watched it while airing -->slow pacing

The karen arc supplements her arc. You're not seeing it as a whole.
