I don't put much thought into it, if I read something online and find a word I've never seen before I'll pop it into a deck. If I'm reading a paper novel away from my computer I'll either make a note on my phone or try to remember it mentally.

I practice writing completely separately from the vocab I get from reading. I learned the first 1k kanji on KanjiDamage with stroke order then switched to JLPT/other vocab methods as my primary decks. I review stroke order occasionally when I'm unfamiliar with the kanji or its radicals.

If I had to handwrite everything I'd probably make a fair amount of mistakes, but I don't practice it too much anymore because I have little use for it.
