I have been reading through Oyasumi Punpun and so far it's pretty good, but I don't understand why Punpun turned into a triangle. Is this supposed to symbolize something?

That's the type of person he is, you can't expect a manga that tackles depression to be all cheery and have a confident main character.
And if you keep reading you'll see that the other characters of the story have a completely different opinion of him. He keeps his complaining to himself, and that's what the reader sees, his monologues.
For me it's way above anything else Asano has ever done.
