Which do I watch first, Akagi or Kaiji?

I watched Kaiji first and I think it's better than Akagi and easier to get into. But not everyone is the same. Just go with whichever one looks more interesting to you. Akagi is super interesting if you learn the rules of mahjong.

Kaiji is more accessible, which isn't a bad thing. It's a great show.
Akagi is great, but you'll have a hard time watching it if you don't understand mahjong/have good subs.

Kaiji

Only get into Akagi if you know basic Majong at the very least. It's great stuff, but pretty heavy and you really do need to know Majong to get the most enjoyment out of it

other gamble/psychology anime worth mentioning: One Outs (perfectly fine without knowing anything about baseball), Legendary Gambler Tetsuya (basic Mahjong knowledge required).

Youtube, wiki, website tutorials, flash games, tenhou, etc. It takes practice and patience but once you get the hang of it, the thrill of winning and despair from losing will hook you in.

I watched Akagi, then I read Ten, which is basically a sequel to Akagi. While playing ten, I played the mahjong flash game. (The super minimalistic one you can find by typing "japanese mahjong" into google and clicking the first result.) I learned most of the hands by reading Ten and applying it by playing. Later I started playing on Tenhou.

The first season will likely piss you off because of what happens in the last episode of the first season, Akagi is there to clean that piss off.
