Hi,
I am using Photoshop and Illustrator for drawings and illustrations, especially for research. I would like to start to create 3D models. Should I start with modeling or sculpting and which software?

For things like your pic related go with 3D modeling, it's much more useful for visualization of that type and will be carried out in the same environment
as you'll conduct your animation and rendering so it'll let you familiarize yourself with a lot of the basic tools you will come to use down the line.

Sculpting is a more of a pure arts task and something you wanna become good at when your primary concern is creating very high fidelity surfaces for pure eyecandy reasons.
If you wanna do something useful out of your 3D sculpting you will need to already be proficient in modelling as well so it's probably more fun
to get into sculpting after you have solid basics in modelling rather than the other way around.

Go with maya, max or blender depending on your level of financial commitment (or views on piracy), personal tastes and aspirations towards future employment etc.
