Beginner here. If want to imitate this style would it be better to poly model this in Maya or to sculpt in zbrush?

Max/zbrusher here. OP model is clearly a boxmodel.
Since i began with Zbrush, my models are finished faster, but they started to lack the sharpness typical from boxmodels. That´s because zremesh removes overall details from the model, rounding most shapes in certain key areas - some guys in here frown from that, bad.
The tradeoff is speed versus quality: the zbrush model will look a bit different, but will come out faster. A whole week faster.

I already am currently watching tutorials on both Zbrush and Maya, and while they are helpful for learning the basics, they don't cover everything.That's why I'm asking for your informed opinion on what tool you think is best for this job and why.

What I'm saying is if you had some experience with box modeling or sculpting, you'd already know the answer to your tremendously simple question.
But you're wasting precious time on 4chan for "informed opinions" instead of learning for yourself. And no, someone telling you an answer like "Sculpting for organic, box modeling for hard surface" or "It depends on your skill and preference, some people do everything in Zbrush" or "People who have been box modeling since before Zbrush can subdiv model basic organic forms extremely quickly, while adding large details extremely quickly and crisply, with only a detail pass needed in Zbrush" aren't useful.
Why aren't those answers useful? Because you don't actually have the experience to utilize any of them. And you'll only get that experience by plugging away at tutorials, videos, books, lecture series, streams from good artists, and so on.

Projected meshes are as heavy as their sculpted counterparts. The difference is that, while inside the lowest subdivision, you can create displacement and normal maps to add details with this, but in the animation software normal mapping usually ruins the model (it was primarily made for game engines). Still, you will have to adjust the model in Max/Maya/etc for errors like rat nests, open polys, duplicated faces and more, so this is when you boxmodel the face details necessary for the animations. You will lose some uvw mapping doing this, so throwing the model back and forth to Zbrush and re-repeating steps is needed to finish the process, since it will be some time until Zbrush gets a real keyframed animation render module.
