But honestly that scene is very simple in terms of geometry, all the work is being done by the textures. You really need to learn the basics; you can't just say "I want to make robots so I'll only do tutorials on robots" or whatever, you just gotta plow through it and learn it properly.
Once you learn the fundamentals you'll be able to make anything you want

You could search for something like 3d pixel art airframe to give you an idea inn what you do. Pic related.

You could probably go so far as to just texture a bunch of cubes and rectangles and just snap-align them together until you build what you want. Then optionally retopologize by just combining and removing faces and edges.

Seriously, I shouldn't be spoonfeeding you, but I hope you realize that you don't have to stick to one tutorial or watch it fully, you're supposed to come in with a question on how to do something and search on how to specifically do that. Want to learn how to create and unwrap UV's? Search specifically for that. Want to know how to apply a texture to a material in Blender? Search for it in Google. Want to know why your materials are showing your textures as pitch-black? Search for that too.

These are very basic things to search about and learn. There's no need to come here and be mad at us and no purpose in searching for a one-size-fits-all tutorial, 3D is way too expansive, this sort of guide doesn't exist. You need to break the process down into granular pieces and solve each problem you have individually.

Learn how to make a cube.
learn how to snap one cube to another cube. Literally, do that until you have built something that looks like what you want. A Lego looking pixelated thingy.

Forget uv. Just add solid colors to each cube until it resembles something.

Do all that first, then take it a step further.

I do this tutorial after modelling the stupid gay fucking anvil, and then it's unwrapping time. awesome, I think, just what I wanted. And straight away after 3 minutes his stupid panel has a bunch of settings and features and tools that mine does not. and he is doesn't fucking explain why that is. what the fuck am i supposed to do then? how to follow the stupid gay tutorial when these cunts can't fucking start on a blank slate?

Create yr model. Mark yr Seams. Unwrap. In the UV Editor you will see the UV map. Hit UV > Export UV layout. Save as PNG with alpha. Import UV layout into PS or whatever app yr using. Draw away. Save as xxxxxxx.png without the UV overlaid.

My main is Maya, I don't use Blender for anything except lightmaps and converting MMD models to VRchat which I don't do anymore. you need this addon to get the UV properly set to pixel art.

simply use this addon and a 256x256 texture, turn off antialising and set to box filtering your texture.

I'd imagine you'd draw up a thumbnail or something before you get started. Draw out the scene on paper so you'd know what you needed in advance.
Having some kind of reference you'd want to begin with would help.

If it were me, I'd probably go both ways with it and make some textures to start out with and model around them, then change them as I needed.
You could draw the whole pixel door/wall thing all at once, and then copy the geometry as you model. It's all simple extrusions and such.
Kind of like how you'd make a sci-fi corridor from a single texture plane (there was a tutorial with it floating around here a long while back).
