Materials general.

How to get into materials? The Principled BSDF (which I guess is supposed to be the shit?) shader has like 20 parameters and I don't have a clue how to work them.

Whats your workflow for creating materials?

Principled BSDF has almost everything you could need. The deal is most of the time you nees just 2 or 3 things depending on what you are doing.

Metalness either 0 or 1. 1 if its a metal or semiconductor 0 for any dielectric material.
Roughness - defines how shiny or matte material is.
Subsurface scattering - you can see it on the ceramic material on your pic, its when your material allows a little light to go through it. If it's white plastic use white color, if its human skin use red etc you use the color your object is on the inside.
Anisotropy is for surfaces that have directional scratches on them, hair is very anisotripic, sonething that has beel sanded in one direction is anisotropic it makes tge highlights stretch along the direction of anisotropic linees.
Sheen - used for shitty unrealistic satin.
Clearcoat - adds another level of transparent glossy dielectric on top of your material like car paint on top of metal ar lacquer on top of wooden floor.
When used right you can gave both good grainy wood and a shiny topcoat on top of it.

everything except for anisotropy is piss easy.

for simple plastic material you just need to set color , metalness zero and roughness. May also use sub surface scattering for certain kinds of plastic

Non-binary metalness is just wrong.
Unless you need something stylized or non-realistic you use it binary, except maybe semiconductors like silicon crystalls that actually are non-metals with some conductivity.
For complex materials like painted metals you should probanly use clearcoat and other shaders on top of this
