how the fuck do Blender's pole angles work
two connected bones (each leg) somehow manage to rotate each other despite there being no connections between the two
setting the pole angle to 0 gives a different rotation each time I hit enter

somebody please help I must be doing something wrong

Have you set the correct IK's to each bone?

Either your IK Target or your pole target is parented to your IK bones.
Probably.
If they are, unparent them.
