that's true, however, each triangle shares it's vertices with another triangle.

think of a cube. it's got four polygons shaped in a ring, with a total of two polygons on the top and bottom.
that's a total of 8 vertices and 6 polygons (quads)
however, each quad can be divided into two triangles by drawing an edge between two vertices that lay on opposing corners of the quad.
6 quads becomes 12 triangles while the object maintains it's 8 vertices.

Look at this point though. If you were to add one vert to the middle of each face of the cube, and convert each face to a point, you'd be doubling your tris, but only adding 6 more verts. One for each face.

if you were to then take that cube, with it's now 24 triangles, and:

divide it into 12 groups of 2 triangles
subdivide the edge that is shared by the 2 triangles of each group
triangulate the resulting 2 quads that are in each group

you would end up with 48 triangles by adding those 12 vertices yielding a total of 24 quads (broken into 48 triangles) 72 edges and 26 vertices.
so while adding a few vertices can increase the amount of polygons a model has, the relationship between vertices and polygons isn't exactly exponential.
